Fresh, homemade Garlic Mayonnaise ‘Alioli con Huevo’ tastes good with everything in my opinion! ‘Alioli’ although traditionally made with just garlic (al) and oil (oli) in a pestle and mortar, I almost always opt for the easy and speedy route with this sauce. It literally comes together in around 5 minutes start to finish. Nothing beats this homemade version: heady garlic infused smooth and creamy, rich mayonnaise with a hint of sharp lemon. I love ‘Alioli con Huevo’ mixed with potatoes or egg to make a salad, smeared generously in a sandwich, as a dip for crunchy vegetables, croquettes or fried fish and of course it is the best accompaniment to Paella or ‘Fideau’ Noodle Paella. So grab your handheld blender and cup and let’s whip this together!

Garlic Mayonnaise

- Ingredients
- 1 cup of light olive oil (sunflower or vegetable oil)
- 1 fresh egg (preferably organic) *
- 1 garlic clove
- Juice of 1/2 lemon
- 1/2 tpsp salt
- Instructions
- You will need a handheld blender and blender cup or wide-mouthed jar.
- Pour 1 cup of light flavored oil into the cup or jar.
- Crack the whole egg into the oil.
- Add 1 crushed garlic clove into the oil mixture.
- Add the juice of 1/2 lemon and salt.
- Place the handheld blender directly over the egg in the oil mixture.
- Turn on high and leave over egg for at least 10 seconds.
- Slowly move the blender up the cup or jar until the whole mixture is thick, creamy and light in color. This should only take seconds!
- Give the Mayo a good mix with a spoon and taste for seasoning.
- Store in the refrigerator.
- Serve and enjoy!

- If you like things spicy then omit the lemon and add a tiny pinch of cayenne pepper and 1 tpsp of paprika.
