Have you ever been disappointed by the choice of olives in your local store? I know I have. I may have the perfect solution for you ‘Alino de Aceitunas Negras con Pimenton y Cebolla’ Black Olives Marinated in Paprika and Onion. This is great served as a snack or as an accompaniment to an ‘aperitivo’. My Mother-in-Law always welcomes us with a dish of these when we go to visit family in Madrid. The flavor of the marinade is unlike any other you can find prepackaged and it’s so much cheaper too! Just with one tin of black olives and a few other simple ingredients you can create a smoky, sweet but tangy marinade that will transform those olives into a flavor explosion. This recipe improves with time. I like to make these at least 2 days before I am ready to serve them. Perfect served with a nice cold cocktail or beer to get the party started. My advice to you is to double the recipe size as they will disappear very fast!

- I have made this before and added other dried herbs to the marinade. A table spoon of oregano or thyme works really well and gives a nice depth of flavor to the marinade.
