The flavor of the marinade is unlike any other you can find prepackaged and it’s so much cheaper too! Just with one tin of black olives and a few other simple ingredients you can create a smoky, sweet but tangy marinade that will transform those olives into a flavor explosion. This recipe improves with time. I like to make these at least 2 days before I am ready to serve them. Perfect served with a nice cold cocktail or beer to get the party started. My advice to you is to double the recipe size as they will disappear very fast!

Black Olives with Paprika and Onion

  • Ingredients
  • 4 cups of tinned black olives (I use pitted olives)
  • 1/2 small onion peeled and finely sliced
  • 1 tbsp sweet smoked paprika
  • 5 tbsp extra virgin olive oil
  • 1 tpsp vinegar (I use sherry vinegar)
  • 1/2 tbsp dried parsley
  • pinch of salt to taste
  1. Instructions
  2. Peel and slice half the onion finely.
  3. Drain all the liquid from the olives.
  4. In a mixing bowl combine the onion, olives, oil, vinegar and parsley and mix well.
  5. Leave to sit in the refrigerator for 3 hours. 
  6. Add salt to taste (some olives are saltier than others).

Top Tips

  • I have made this before and added other dried herbs to the marinade. A table spoon of oregano or thyme works really well and gives a nice depth of flavor to the marinade.
