My fondest memory of ‘Ajoblanco’ Almond and Garlic Cold Soup is from my Wedding Day! We got married many years ago in Galapagar, not far from Madrid in the height of the sweltering mid-summer heat. I think the mercury reached over 107 on that special day. We chose to serve this soup as a refreshing appetizer to combat the heat and cool down the palate. ‘Ajoblanco’ is could be a Picasso. Pure white and creamy dotted with vibrant green grapes, sprinkled with crunchy almonds and drizzled with deep yellow extra virgin olive oil. Almond and Garlic Soup is so refreshing and light on a hot summer’s day. It is smooth and silky, nutty and earthy from almonds, deep with garlic and bright and juicy with every bite of green grape. 

Almond and Garlic Cold Soup

Almond and Garlic Cold Soup

  • Cook Time: 25 min prep 3 hours to chill

  • Ingredients
  • 5 oz of blanches almonds
  • 5 oz of day old baguette bread (not the crust)
  • 1 large garlic clove (or 2 small cloves)
  • 1/3 cup of extra virgin olives oil
  • 2 tbsp of vinegar (I use apple cider vinegar)
  • 4 cups of water
  •  1 tpsp salt
  • Optional Garnish:
  • Handful of sliced green grapes
  • Handful of slivered or sliced almonds
  • Drizzle of extra virgin olive oil
  1. Instructions
  2. Cut the crust of off the bread, dice and leave bread to soak in the water.
  3. If your almonds have skin on now blanch your almonds to remove.
  4. Boil water in a small pan and add the almonds. Simmer for 2 minutes. 
  5. Remove from heat and rinse with cold water over a sieve. 
  6. Peel off the almond skins.
  7. Peel and roughly chop the garlic cloves.
  8. In a food processor blend on high the almonds, garlic, water with soaked bread, vinegar and salt.
  9. Blend on high for 2-3 minutes.
  10. With the food processor still on slowly drizzle the oil into the mixture so that it emulsifies. 
  11. Once all the oil is added turn the food processor to high and blend for a further 20 seconds.
  12. Chill in refrigerator for at least 3 hours.
  13. Top with sliced fresh green grapes, almond slivers or slices and a drizzle of extra virgin olive oil.
